Ingredients
For the salsa:
❖ 1 large avocado, peeled, pitted, and diced
❖ 1 diced and de seeded tomato
❖ 1 small shallot, diced
❖ 1 clove garlic, diced
❖ 1 jalapeño pepper, seeded and diced
❖ 1 lime juice
❖ 1/2 teaspoon salt
❖ 1/4 teaspoon ground cumin
For the burrito:
❖ 1/4 teaspoon smoked paprika
❖ 1/4 teaspoon salt
❖ 1/2 lb spicy sausage (such as chorizo, Italian, or anything you like), removed from casings (about 3 to 4 sausages)
❖ 300g of grated cheese (generous, can do 150g)
❖ 4 burrito-size flour tortillas
❖ Vegetable oil
❖ 4 eggs
